 Tomato and Beetroot Saar


Very simple recipe, easy to make and also very nutritious. This recipe requires very few ingredients but actually, the less ingredients makes this soup even more tasty as there are no spices to overpower the taste and goodness of Tomatoes and Beetroot.  

In the current pandemic situation, it has become even more important that we improve our immunity and for that we must ensure that we incorporate healthy vegetables and fruits in our diet. Tomatoes are excellent source of Vitamin C, Potassium and folate. Beetroot too is a good source of fibre, folate, iron and Vitamin C. 

I have made this saar a lot when my boys were toddlers. Used to serve them with soft plain rice and even today it is one of their favorite combination. Do give it a try and also let me know if you liked it.


To make Tomato and Beetroot Saar, we will need-

3 medium sized tomatoes

2 slices of beetroot

1 inch piece of ginger

1/2 tsp ghee/ clarified butter

1/2 tsp Jeera seeds/ Cumin seeds

1/4 tsp Hing/ asafoetida)

few curry leaves

Salt and sugar to taste


Method-

  1. Chop tomatoes, beetroot and ginger and put them in a pressure cooker pot. Add one cup of water.
  2. Pressure cook tomatoes and beetroot for 3 whistles and then let the pressure cooker depressurize before opening. 
  3. Let the tomatoes and beetroot cool down and then grind it all in a blender till it is a smooth paste.
  4. Strain this mixture to remove all the tomato seeds and skin pieces to get a very smooth paste.
  5. Heat a kadhai or any pot on medium flame. Do not let it be too hot.
  6. Once the pot is slightly heated, add 1/2 tsp ghee/ clarified butter and let it melt.
  7. Once the ghee is slightly heated, add cumin seed, 1/4 tsp Asafoetida and few curry leaves (you can green chilies too if you want it spicy). Mix it.
  8. Add tomato and beetroot paste. Add one cup water and mix well.
  9. Add salt and sugar as per your taste. Let it all boil.
  10. Once it starts boiling, simmer and let it boil for another 4-5 minutes. 
  11. Our Tomato and Beetroot Saar is ready to be served!


Tips:

  1. You can add few pieces of green chillies when making a tadka to add spiciness to this Saar.
  2. You can substitute Sugar by jaggery to make it even more healthier. I myself add jaggery or brown sugar instead of regular sugar many times.
