White Chocolate and Cranberry Cookies


 


I love these cookies anytime of the year but love to bake them specially for Christmas due to their red, white and green color. They are perfect for holiday baking and make a very good holiday gift to share with our family and friends. I can assure you, your friends will be happy you shared these cookies with them!


These cookies are thick, soft and super delicious. The cranberries give nice tartness to these cookies which is balanced by the sweetness of white chocolate and the pistachios add a nice nutty flavor to these cookies. Together they make a wonderful combination!


It is very easy to make recipe. In given measurements, we can make around 24 cookies. Just make sure to be around the oven while the cookies are baking as they will be ready in about 10 minutes. Once you notice that the rim of cookies are light brown shade, it will be safe to take out the cookies from the oven. 




Ingredients-

All Purpose flour- 2 cups

Sugar- 1/2 cup

Brown sugar- 1/4 cup

Cranberries- 1 cup

White Chocolate- 3/4 cup

Pistachios- 1/4 cup (chopped)

Butter- 1/2 cup (melted)

Egg- 1

Vanilla extract- 1 teaspoon

Baking powder- 1 teaspoon

Milk- 2 tablespoon

Salt- 1/4 teaspoon

  • In a bowl, take 2 cups all purpose flour. Add 1/4 teaspoon salt and 1 teaspoon baking powder. Keep it aside.
  • In a big mixing bowl, take 1/2 cup melted butter and add 1/2 cup sugar and 1/4 cup brown sugar. Beat it together with an electrical hand mixer for 2 minutes till it is well blended.
  • Now add 1 egg and beat again for 2 minutes.
  • Add 2 tablespoon milk and beat again for a minute till milk is completely mixed with the butter mix. You can now keep aside the hand mixer.
  • Add 1/3 rd of the flour and mix with a spatula. 
  • Then add 1 teaspoon Vanilla extract and mix well.
  • Now add another 1/3 part of the flour and mix well.
  • Add remaining flour and mix it in to a cookie dough. Once all has mixed well, add 1 cup cranberries, 3/4 cup white chocolate chips and 1/4 cup pistachios. 
  • Cover it and refrigerate it for minimum 1 hour.
  • Preheat the oven at 375 degrees Fahrenheit (185 degrees celsius) .
  • Scoop out cookies on a cooking tray and then bake in preheated oven for about 10 minutes. Once the rim of cookies are light brown in color, it will be safe to remove the cookies from the oven.
  • Let them be on the cookie sheet for 5 minutes and then put it on cooling rack till they cool down completely.
  • Delicious cookies are ready!!

Notes- 

Save half of pistachios and sprinkle them on top. It will add nice color to the cookies.

If you are using 2 cookie sheets, make sure to rotate the tray in between so that the cookies in top rack don't get too brown and all the cookies bake evenly.
