 Sevai Upma





Sevai Upma is popular breakfast recipe in South Indian Cuisine. It is prepared using wheat vermicelli (thin noodles) and is also called Vermicelli Upma in many places. It is very quick and easy recipe and hence makes a perfect choice for breakfast on busy mornings. 

There are many versions of making Sevai Upma. The basic Sevai Upma is made without any vegetables and that is the recipe I am following today but you can add vegetables of your choice and some peanuts to make it a balanced meal. 

It tastes great by itself but you can serve it with coconut chutney or sprinkle some Idli podi on the top to enhance the taste! And though it is traditionally a breakfast recipe, you can enjoy it any time of the day. As suggested, you can add vegetables and nuts and make it a single dish meal. Ingredients-

Sevai/ Vermicelli- 2 cups
Oil- 1 tablespoon
Ghee/ Clarified Butter- 1 tablespoon
Urad dal- 2 tablespoon
Mustard seeds- 1 teaspoon
Cumin seeds- 1 teaspoon
Green Chillies- 2 or 3 as per your liking
Curry leaves- 7 to 8 leaves
Onion- 1, sliced.
Asafoetida- 1/2 teaspoon
Ginger-  grated,1 teaspoon
Juice of 1 lemon
Salt and sugar as per taste
Chopped Coriander for garnish (optional)

  • Heat a pot or a kadhai on medium heat.
  • Add 1 tablespoon oil and 1 tablespoon ghee to it.
  • Once the ghee has melted, add 2 tablespoon Urad dal and let it fry till the dal has light pinkish color.
  • At this point, add 1 teaspoon mustard seeds and let them crackle.
  • Add 1 teaspoon cumin seeds, curry leaves (chop if you like) and sliced onions.
  • Saute till the onions are cooked and light pink in color.
  • Add 1/2 teaspoon asafoetida (hing) and 1 teaspoon grated ginger.
  • Saute for just a minute and then add sevai /vermicelli.
  • Saute till the sevai is light brown in color.
  • Add water just enough to dip the sevai and not more else our Upma will turn out soggy.
  • Add juice of one lemon. Add salt and sugar as per your taste and mix.
  • Cover and cook for 8 to 10 minutes.
  • Open and confirm that the sevai has cooked properly and turn off the flame.
  • Garnish with chopped coriander and serve hot!
