Tomato Soup

Well, this is the first post in this new year so let us start with something healthy. Today sharing a recipe for a simple but tasty Tomato Soup. Even as a kid, this was my favorite soup. I used to order it every time we dined out. Today after learning so many wonderful soup recipes, this soup still holds a special place in my heart.



We will be using fresh vegetables for this soup. We all know that both ginger and garlic have medicinal value. We are also adding some carrots and beetroot to increase the nutritional value of this soup and a small potato will give this soup a very nice consistency. 



Ingredients-

Tomatoes- 4 medium sized

Onion- 1 small, diced.

Carrot- 1 small, diced.

Beetroot- 1/2 medium sized, diced.

Potato- 1 small one, diced.

Ginger- 1 inch piece

Garlic- 3-4 cloves

Bay leaves- 1

Ghee/ clarified butter- 1 tablespoon

Optional- Bread croutons, Black pepper powder, cream, butter


  1. Heat a pressure pan or a pressure cooker on medium heat and add 1 tablespoon ghee and let it melt.
  2. Once the ghee has melted, add 2 bay leaves and chopped ginger and garlic.
  3. Fry for a minute and then add onions. Saute for a minute.
  4. Then add chopped carrot, beetroot and potato and saute for 2 minutes.
  5. Add roughly chopped tomatoes and mix it all well.
  6. Now add some salt and sugar as per your taste.
  7. Mix and then add 2 cups of water.
  8. Pressure cook for 4 whistles.
  9. Let the pressure cooker cool down completely and then open.
  10. Remove the 2 bay leaves we added and then blend it it a blender to a smooth puree.
  11. Take a pot and strain the puree to remove and tomato seeds or bits of vegetables left behind.
  12. Now we have smooth paste. Heat this mix on medium heat.
  13. Add water if required and also adjust seasonings as per your taste.
  14. Let the soup boil for minute or two before putting off the flame. The potato in this soup will give enough thickness to this soup and we won't need to add any cornflour. If for some reason, you are not using potato, then add 1 tablespoon cornflour mixed with water to the tomato mix and keep stirring continuously so that no lumps are formed.
  15. Serve it hot, topped with some bread crouton and garnish with some black pepper powder. You can also add a teaspoon of butter or cream if you like to give it even more richer taste.
