Veg Pulao in Pressure Cooker

 






Vegetable Pulao is one of the most popular dish in Indian cuisine and is very commonly prepared all over India. It is vegetarian, vegan, gluten free, very delicious one pot meal which can be prepared in no time! I have already shared the recipe using Pulao Masala with you all recently and today I sharing the traditional recipe using whole garam masalas. You can prepare it in pot like shown earlier or make this already easy recipe even more quick and easy by preparing it in pressure cooker/ pan. I m preparing it in pressure pan today. 



As mentioned in my earlier post, you can add Soya nuggets or even Garbanzo beans (Chole) or Kidney Beans (Rajma) to add protein to this dish and serve it with a bowl of yogurt. A little achar and papad on side will complete this menu! So let us begin.....






Ingredients-

Long grain rice- 1 and 1/2 cup

Ghee/ Clarified Butter- 1 tablespoon

Oil- 1 tablespoon

1 teaspoon Caraway seeds

2 Bay Leaves

1 Black Cardamom

1/2 Star Anise

2 inch piece of Cinnamon Stick

4-5 Cardamom

1 Mace

5-6 Cloves

Ginger-garlic paste- 1 tablespoon

Green Chilies- 2, slit or cut into big pieces

Onion- 1 medium sized, sliced

Green Beans- 3/4 cup, cut in long pieces

Carrot- 3/4 cup, cubed

Potato- 1 medium sized, sliced

Cauliflower- 1 cup big florets

Pulao- 2 and 1/2 to 3 teaspoon

Green Peas- 1/2 cup

Lemon- 1/2

Salt for taste

Cilantro leaves chopped finely and some grated beetroot for garnish




Heat a pressure pan on medium heat.



Add 1 tablespoon oil and 1 tablespoon Ghee/ Clarified Butter.


Add 1 teaspoon Caraway seeds, 2 Bay Leaves, 1 Black Cardamom, 1/2 Star Anise, 2 inch piece of Cinnamon Stick, 4-5 Cardamom, 1 Mace and 5-6 Clove. 

Fry the masalas in ghee for 1 minute. Make sure that the heat is on low.


Add 1 and 1/2 tablespoon Ginger- Garlic paste. Fry for about a minute till the paste is cooked.


Add 2 green chillies slit in to half and fry for one more minute.


Add one medium sized onion sliced thinly and saute till they are translucent.



Add 3/4 cup Green Beans cut in long pieces, 3/4 cup Carrots cubed and 1 medium sized potato sliced. Stir fry these vegetables for 2 minutes.



Then add 1 cup Cauliflower florets and 1/2 cup Green Peas and mix well.



Wash 1 and 1/2 cup Basmati Rice and soak it for 20 minute. 


Drain all the water and add the rice to the pressure pan. Stir very gently for 2 minutes.





Add 2 and 1/4 cups of water and add juice of 1/2 lemon.


Add salt as per taste. Scrape the sides if required.


Cover and pressure cook for 1 whistle.



Open once the pressure cooker has cooled down.
Just check of the rice is cooked. Let it sit for few minutes before fluffing the rice with fork or with spatula. Be gentle.


Gently fluff the rice. Our Veg Pulao is ready!


Serve it with Raita / Soup/ pickle..... anything of your choice! Enjoy!!
