Veg Pulao




Vegetable Pulao is very simple and lightly flavored rice recipe which is a very popular rice in Indian cuisine. It makes a healthy, delicious, nutritious and satiating one pot meal option. At our place we often choose to prepare Veg Pulao for dinner on days that we had heavy lunch. Simple Veg Pulao with some soup or saar or just a bowl of yogurt and may be some papad on side make a complete meal. 




You can also add some Soya nuggets to add protein to this dish. I will some day soon prepare Soya Nugget Pulao too and share the recipe with you all but today I am sharing a traditional recipe for Veg Pulao but will be using the home made Pulao Masala (I have shared the recipe recently) instead of whole garam masalas. This Pulao Masala does change the color of the Pulao slightly but believe me, it adds lot of flavor to it too!



Ingredients-

Long grain rice- 1 and 1/2 cup

Ghee/ Clarified Butter- 1 tablespoon

Oil- 1 tablespoon

Caraway seeds or Cumin seeds- 1 teaspoon

Ginger-garlic paste- 1 tablespoon

Green Chilies- 2, slit or cut into big pieces

Onion- 1 medium sized, csliced

Green Beans- 3/4 cup, cut in long pieces

Carrot- 3/4 cup, cubed

Potato- 1 medium sized, sliced

Cauliflower- 1 cup big florets

Pulao- 2 and 1/2 to 3 teaspoon

Green Peas- 1/2 cup

Lemon- 1/2

Salt for taste

Cilantro leaves chopped finely and some grated beetroot for garnish


 Heat a pot on medium heat.





Add 1 tablespoon oil and 1 tablespoon Ghee/ Clarified Butter.


Add 1 teaspoon of Caraway seeds.


Add 1 and 1/2 tablespoon Ginger- Garlic paste. Fry for about a minute till the paste is cooked.



Add 2 green chillies slit in to half and fry for one more minute.


Add one medium sized onion sliced thinly and saute till they are translucent.



Add 3/4 cup Green Beans cut in long pieces, 3/4 cup Carrots cubed and 1 medium sized potato sliced. Stir fry these vegetables for 2 minutes.


Then add 1 cup Cauliflower florets and stir for a minute.



Add 2 and 1/2 teaspoon Pulao Masala. Mix well.



Wash 1 and 1/2 cup Basmati Rice and soak it for 20 minute. Drain all the water and add the rice to the pressure pan. Stir very gently for 2 minutes.



Add little less than 3 cups of water. Mix.



Add 1/2 cup Green Peas and mix well.






Add juice of 1/2 lemon and add salt as per taste. Scrape the sides if required.




Cook uncovered for 4-5 minutes. The rice will be 75% cooked.


Gently mix once again and then cover and cook for 5 minutes on low flame. Make sure that the rice is cooked and then turn off the burner.



Let the Pulao cool down a little bit. Gently fluff the rice.



Serve it with Raita / Soup/ pickle..... anything of your choice! Enjoy!!
