Banana Nut Muffins

 




Hello All! Are you looking for ways to use up overripe bananas? Well, then here is a perfect recipe to use them. Actually, at our home we get extra bananas and let them over ripe so that we can make these muffins! These homemade banana nut muffins are always in demand and thank god bananas are available all through the year! 


Freshly baked banana nut muffins make a great breakfast, snack or lunch box addition. You can use this same recipe to prepare Banana Nut Bread too but these days I prefer prepare muffins firstly because it saves lot of energy and time as baking a bread takes around 75 minutes where as the muffins are ready in 25 minutes. Also there is something about the grab and go appeal of a muffin that makes them easy to serve or pack for lunch!



Ingredients-

Whole Wheat Flour- 1 cup

All purpose flour- 1 cup

Butter- 1/2 cup

Bananas- 3, preferably over ripe ones

Eggs- 2

Sugar- 1 cup

Walnuts- 1/2 cup chopped in to pieces

Baking Soda- 1 teaspoon

Vanilla Essence- 1 teaspoon

Salt- 1/4 teaspoon




In a bowl, take 1 cup of All purpose flour.



Add 1 cup whole wheat flour.



Add 1/ teaspoon salt.



And add 1 teaspoon Baking Soda. 



Mix and keep aside.



In a smaller bowl, crack open 2 medium sized eggs and beat them lightly.



Peel 3 over ripe bananas and puree them.

Preheat oven at 375 F/ 190 C.



In a big mixing bowl, take 1/2 cup melted butter.



Add 1 cup sugar. You can use Brown sugar instead of white sugar to make it more healthier.



Beat it with whisk/ electric beater/ Stand Mixer for about 3 minutes till the mixture is pale yellow.




Add 2 eggs beaten lightly and mix together for about a minute.




Add banana puree and mix for another minute or two till everything is well blended.



Add the dry mix little at a time and mix well. Don't over beat. Stop once all the flour is well incorporated.



Add 1/4 cup of milk. Little at a time. 



Scrape sides if required. Mix.



Add 1 teaspoon Vanilla essence.



Gently mix in 1/4 cup of chopped walnuts. Save 1/4 cup of walnuts for later use.



Now fill the muffin moulds till 3/4 full.



Top it with some more chopped walnuts.



Bake them in oven for about 20 minutes or till the toothpick comes out clean.



Our yummy and healthy Banana Nut Muffins are ready!



You can also warm them in microwave and top it with some Vanilla ice cream. It makes a wonderful dessert!
