Mayonnaise




Sharing with you all a recipe to prepare fresh, thick and creamy Mayonnaise. This is one of the most easiest condiment to prepare. Just put together all the ingredients in a narrow container or a blender jar and blend it till all the oil is incorporated and your creamy and yummy Mayonnaise is ready within a minute!


Just make sure that you are using pasteurized egg for this recipe as we are using it raw. The best part of preparing Mayo at home is that we can use the best quality oil (Canola/ Olive/ Avocado.....) and increase or decrease the quantity of Vinegar and Mustard to suit our taste. Like my kids like it little tangy so I add 1 teaspoon of lemon juice along with 1 tablespoon of white vinegar but you can omit the lemon juice and it will still come out good.


For this recipe we will need-

Egg- 1

Lemon juice- 1 teaspoon

White Vinegar- 1 tablespoon

Dijon Mustard- 1 tablespoon (adjust as per your liking)

Oil- 1 cup

Olive oil- 1/2 cup

Salt- 1 teaspoon or as per your taste




In a narrow container, crack one egg.



Add 1 teaspoon lemon juice.



Add 1 tablespoon white vinegar.



Add 1 tablespoon Dijon mustard.



Add 1 cup Oil.



Add 1/2 cup Olive oil.



As 1 teaspoon salt or as per your taste. Remember that Dijon mustard has salt in it too.



Immerse a hand blender to the bottom of the container and start mixing gently just few pulses at a time. 



Once the oil starts emulsifying, gently lift the hand blender and move up and down slowly to incorporate all the oil.



Within a minute, all the oil will be emulsified and your creamy and yummy mayonnaise will be ready.



Tips- 

  • You can adjust the quantity of Dijon mustard as per your liking.
  • You can prepare this recipe in a regular blender jar. Just add all the ingredients to the jar and blend till thick.
  • You can add garlic or black pepper powder to add flavor to the Mayo.
